Location
The hamlet of Schnaus is located near the town of Ilanz on the "Bündner Oberland", Grisons highlands – largely uncharted territory in culinary terms. It is well worth a detour, and may be conveniently combined with a stay in Flims-Laax.
Ambience
It does not get any cosier than these wood-panelled rooms – not least because of the scent of freshly stained wood.
Infrastructure
The restaurant extends over two rustic but elegant dining rooms with tables decked out in white. During the warm season, the little patio beckons with its magnificent view.
Culinary
A veritable feast is the "45-minute egg" with local ingredients, done with beef tartare and bread cubes roasted the Mediterranean way. It is possibly topped, though, by the Arctic char variation from Val Lumnezia. We were as thrilled as we were astounded later when we learned that Tino Zimmerman does all this with just one other hand in the kitchen. The dishes are so well planned and refined that we were sure they could not have been prepared by less than a team of ten.
Wine List
A tempting wine cellar, perfect for a tasting in a small circle of friends. The well-appointed wine list of around 100 names puts the emphasis on domestic wines.
Service
Delectable! Despite the fact that we were an hour late and showed up outside the regular business hours, hostess Cornelia Auchter was perfectly at ease and charming when welcoming us. Bad traffic and all the hustle and bustle were quickly forgotten, and we devoted our whole attention to the fresh-market cuisine of Tino Zimmermann.

An ancient lovingly restored inn typical of Grisons, with a small but beautiful restaurant. Tino Zimmermann, its chef, is committed to a seasonal fresh-market cuisine. He prefers to let himself be inspired by whatever produce is in season, and processes regional premium products into down-to-earth dishes without frills. For instance, he gets his trout from Curdin Capeder in the Val Lumnezia valley, his asparagus from his native village of Flaach in the Zurich region, buys eggs locally in Schnaus, and harvests herbs, vegetables and fruit in his own garden. Every one of his creations bespeaks his love of the finished product, and is testimony to his creative genius of turning simple things into wonderful dishes. You will search the menu in vain for seafood and shellfish, as Switzerland is of course a land-locked country. Authentic, ambitious, and always worth a detour. Closed on: Mondays and Tuesdays

Charming and attentive service that leaves nothing to be desired.
"In the middle of nowhere" – as there is no other hotel nearby that has been recommended by Pillow & Pepper (yet). The venues found in the surrounding area are little more than purpose-built accommodations.
