Individual ratings for Schloss Schauenstein

Location

What is the opposite of centrally located? Schloss Schauenstein – in the small hamlet of Fürstenau in the Domleschg Valley, far from the tourist hang-outs, would be a fine illustration of it.

Ambience

The thick castle walls dating back to the 13th century are an exquisite setting for the restaurant / hotel of Andreas Caminada and Marcel Skibba.

Infrastructure

Restaurant set across two dining rooms, salon, smokers’ lounge, 12 rooms and suites, a terrace, a garden with natural swimming pond; next door, the inn Casa Caminada and the vegetarian restaurant “Oz.”

Culinary

Andreas Caminada (awarded three Michelin stars since 2010) defines a cuisine that is precise, expressive and quietly compelling. Each dish is a study in clarity, shaped by an uncompromising respect for the ingredient. The castle’s vegetable garden sets the tone. Together with co-owner and Head Chef Marcel Skibba, Caminada works with what is growing and ripening in Fürstenau at that moment. Szechuan pepper, persimmons and Malabar spinach speak of the region’s distinctive microclimate — and lend the menu its depth, structure and unmistakable identity.

Wine List

Fascinating wine menu with around 700 vintages and extensive selection of local Graubünden vintners.

Service

Marked by silent perfection.

What arrives on the plate unites technical mastery with a profound respect for the ingredient.
